lobsta rollin'

Tonight we went to Coastal Flats for dinner. Initially, we wanted to hit up Maggiano's, but our reservation for 7 was denied. I was a little bummed that I wasn't going to taste the tiramisu that Joe & Grace keep raving about, but I was excited to finally sink my teeth into a lobster roll. We started with a few rounds of libations and appetizers and ended the night singing happy birthday on an unbirthday :o)

green curry chicken

Thai people are serious about their heat! I seriously under estimated the power of this tiny can. Luckily I had an extra can of coconut milk to counter balance the heat :p

1 can of green curry paste
2 cans of light coconut milk
1 pkg of chicken breast cut into cubes
1 cup of green beans
1 pkg of mushrooms
1 onion cut length wise

saute onion and chicken with oil on medium heat until chicken is cooked
add curry paste and coconut milk and simmer for 15 minutes
add green beans and mushrooms and simmer for another 10 minutes
add salt for taste
serve over rice...enjoy!

baby diaper cake

Last Saturday I made a diaper cake for my friend's baby shower. Not only was it fun to make, but the mom to be loved it and some of the kids thought it was an actual cake :p I used two packages of diapers (size 1) and filled the middle with baby Aveeno products.

I decorated the cake with lots of baby essentials and laced it with girly bows and headbands.

I used a hand and foot print set as the cake topper and wrapped it up in "it's a girl" ribbon.
