black bean & sweet potato chili

The weather has been so warm for the past few days that I was tempted to start storing away my winter clothes. Thank goodness I didn't give into my temptations because it was freezing cold today! What's a better way to warm up your body than a nice bowl of chili?


ingredients

2 tsp olive oil
3 cloves of garlic
1 onion
1 can of diced tomatoes
1 can of black beans (drained)
2 sweet potatoes (cut into bite size pieces)
1/2 cup of frozen corn
2 tsp cumin
1 tsp chili powder
1 chicken bouillon
1/2 tsp cayenne pepper
cilantro

directions

Peel and cut the sweet potatoes and set aside. In a medium pot heat up the olive oil and saute the garlic and onions on medium heat. Add the can of diced tomatoes, black beans and one can of water to the pot. Once the mixture starts to boil add the sweet potatoes, cumin, chili powder, chicken bouillon and cayenne pepper. Let it boil for about 20 minutes or until the sweet potatoes are cooked. Add the frozen corn and turn the heat down to low for another 5 minutes. Add salt for taste and garnish with cilantro.
