flirty thirty veggie tempura

On Saturday the bf turned 30, so I decided to treat him to his favorite dish: Chicken Katsu. Of course I had to whip up a veggie version for myself...

sweet potato, onions, & cauliflower

flour, eggs, & panko

step one: dip veggie in eggs
step two: roll veggie in flour
step three: dip veggie in eggs

step four: roll veggie in panko

step five: deep fry panko covered veggies in super hot peanut oil until golden brown.
step six: place deep fried veggies on a paper towel to absorb excess oil, then place on a bed of cabbage.

The Verdict:
Sweet potato & onion tempura hit the spot.
Cauliflower tempura was a total miss!
The soba was the heavy hitter for the night :p

Place dry soba noodles in a pot of boiling water then drain after noodles are cooked. Rinse noodles under cold running water.

Place noodles in a bowl of cold soba sauce.

Top with chopped green onion, seaweed flakes, and Japanese red pepper. Yomz!
