One of the perks of working at
AARP is the access to information regarding health and aging. I recently came across an
article that spelled out the benefits of a Mediterranean
diet. The key ingredient:
olive oil. Curiosity killed the cat, so I googled "
foods you should eat every day". The most recommended food:
tomatos. Thinking I could get a dose of longevity in one meal I came up with this salad:

After slicing a
handful of heirloom
tomatos, hearts of palm, and fresh basil; I added a pinch of red pepper flakes for heat and drizzled a tablespoon of olive oil and
balsamic vinegar for some twang.
Viola! A yummy fountain of youth...
