simple shrimp pasta

Planning a group trip is never easy, especially when you plan on feeding everyone. My girl April did such an awesome job planning our Killington trip. She put in the time to buy all the groceries to sustain 15 hungry people for breakfast, lunch and dinner for 4 days and 3 nights! Dinner was broken down to Filipino night, pasta night, and taco night. I had to give her snaps for her simple shrimp pasta that she made to accommodate all the non-meat eating folks.


While boiling the fettuccine noodles she put the following ingredients in a large bowl:

3 tbsp olive oil
4 cloves chopped fresh garlic
1/2 cup chopped fresh basil
fresh mozzarella (cut into bite size pieces),
1 cup of shrimp

Then she added hot fettuccine noodles in the bowl and tossed it all up to melt the mozzarella into the pasta and combine the flavors. Of course I had to top off my portion with some crushed red pepper flakes. I swear she made this in under 30 minutes. Beat that Rachel Ray!
