butter tofu curry

I was never a big fan of Indian cuisine until I experienced my first Indian lunch buffet with my co-workers. After that it was game over, I had to have Indian food at least once a week. Indian cuisine is very vegetarian friendly, since most Indians do not eat meat for religious purposes (Hinduism), and flavorful. Indian cuisine has a variety of curry dishes. One of the most popular curry dishes is butter chicken curry (I eat the veggie friendly version). This curry has a buttery tomato flavor with a hint of spice. After googling some recipes for the curry, I decided that it would be much easier to make the dish using a pre-made paste. Last night I made butter tofu curry using Kitchens of India.


Since I was using tofu I decided to only use half of the curry paste. I also added a cup of frozen peas and an additional 2 tbsps of butter (butter makes everything taste better). I served it over white rice...yum!
