fresh veggie sandwich with spicy basil mayo

Don't you hate it when you get that mouth watering, gotta have it right away food craving for something that's only sold at one place...and that one place is not within driving distance? Ugh, it sucks! Last week I was craving a fresh vegetable sandwich from Bread & Butter. The mint chili chutney is fresh, spicy, and full of flavor,which is why this sandwich is on my list of faves. Knowing that I wouldn't be back in the AC vicinity any time soon, I had to come up with my own alternative to satisfy my intolerable craving.

Basil Mayonnaise
  • 1 cup good mayonnaise
  • 10 to 15 basil leaves, chopped
  • 1 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon freshly squeezed lemon juice
  • 1 tablespoon good olive oil
  • 1 teaspoon minced garlic
Directions

Whisk together the mayonnaise, basil, salt, pepper, lemon juice, olive oil and garlic. Spread the mayonnaise mixture on the top of 2 slices of bread. Stack sliced tomatoes, cucumbers, and onions on top of one bread slice. Place the remaining slice of bread, mayonnaise side down, on top of the stack of vegetables and cut the sandwich in half and serve.

Chomp! This sandwich lasted 2 minutes...mission "fresh veggie sandwich" accomplished!
